Freeze Drying
Freeze drying is a low temperature dehydration process. It involves freezing the product and lowering the pressure which, removes the ice by sublimation. This process is in contrast to dehydration by most conventional methods that evaporate water using heat. Because of the low temperature used in the freeze drying process the rehydrated product retains much of its original qualities.
